MATTAWA - The asparagus harvest on the Wahluke Slope should  be going full blast this week. Temperatures are expected to be in or near the 70s.

Cutting at Rizzuti Farms started on April 20, according to cutters. It was still an every-other-day proposition last Friday.

Rizzuti Farms asparagus goes to Snow & Sons Produce in Outlook. A transport crew, led by Gabino Cavazos, comes to the farm from Outlook in an SUV and a long haul truck to move the harvest.

The crew includes Mary Venegas, who grades the spears. Cavazos weighs all of the harvest on site, and the nearly 500 cutters know their pay before the day is ended.

According to Cavazos, Rizzuti Farms has four circles of asparagus. At peak harvest time, they can produce as many as 3,000 field lugs of spears.

The cutters work for Rizzuti Farms. The transport crew works for Snow & Sons.
