Stuffed meatloaf: An easy weeknight meal

Let's face it. Meatloaf isn't the first thing you think of when you're craving a healthy, veggie rich meal your entire family will want to eat. This dish has unfortunately gained the stereotype of an old fashioned, boring brick of ground beef that can only be stomached when slathered in ketchup and served with an enormous potato topped with a cup of sour cream.
Kids usually don't like the consistency of the ground meat, and then there is the nightly struggle of trying to get them to eat vegetables with the meatloaf, that is if you can get them to eat the meatloaf at all. I myself have never thought the look of a traditional meatloaf all that appetizing. It's a well known fact that if the food LOOKS better, it will most likely TASTE better.
So here is your challenge. Make this dish, and see how many plates are scraped clean by the end of dinner. This isn't your grandma's meatloaf. It's an easy, inexpensive, weeknight meal that combines veggies and lean ground beef, and will keep your family raving about it long after the table is cleared and dishes are washed.

Stuffed meatloaf
PREHEAT OVEN TO: 350 degrees
BURGER MIXTURE
1 lb lean ground beef
2 tsp. garlic powder
2 T. worcestershire sauce
pinch of salt and pepper
1/4 c. Italian or plain bread crumbs
1/2 c. onion
* Mix these ingredients together in a metal bowl.
* Place the burger mixture on a piece of wax paper and form a flat 10 inch by 10 inch layer about 1/2 an inch thick.
MEATLOAF FILLING
2c fresh spinach (stems removed)
1c sliced mushrooms
1c shredded mozzarella cheese
* Spread the meatloaf mixture over half of the surface of the burger.
* Slowly roll the burger over the mixture,using the wax paper to firmly press the loaf each time you roll it. Use the same technique you would use to make a sushi or cinnamon roll.
* When you finish rolling, pinch the ends of the loaf to seal in the ingredients.
* Bake in a greased pan for 40 min.
* Take out the meatloaf and coat with a mixture of ketchup, spicy mustard and brown sugar. (About 4T. ketchup, 2T. spicy mustard, and 2T. brown sugar.)
* Continue to bake for 10 more minutes. Remove from oven and let sit 5 minutes.
* Slice and enjoy with your favorite side! I like mashed or baked potatoes and a fresh, garden salad.
HELPFUL HINTS:
• Don't over-mix the burger. Doing so will make it fall apart and unable to hold the roll shape.
• Bake the meatloaf on top of a baking rack so that the fat from the meatloaf can cook off of the meat and not soak into the bottom of the dish.
• Making this Sunday night makes Monday lunches quick, easy and delicious!

When it's this nice outside, one of my favorite things to do is get up early, grab a hot cup of coffee and sit outside reading the newspaper, and listening as the rest of the town awakens and prepares for the day.
