Authentic Tex-Mex is the flavor of the day on the edge of Libby’s city limits.

La Enchilada Tex Mex opened in May and has steady business ever since at 30270 Highway 2, one of the last buildings until motorists get into Troy.

Bernardino Garcia and German Yanez opened La Enchilada after already establishing an authentic Mexican restaurant in Spokane.

The manager, Gina Garcia, is Bernardino’s granddaughter and loves the area.

“The people are so kind, and the beautiful river is another reason we wanted to be here,” Garcia said. “I think Tex-Mex is a good fit for Libby.”

Garcia also was impressed by the openness from those in Libby to some of the restaurant’s more… authentic dishes.

She said one of the hottest selling items was Lengua al Chile Chipotle, or beef tongue in a spicy chile sauce.

Another draw was the seafood. Shrimp and fish are served up in traditional ways that may be hard to find in Northwest Montana.
