A flavorful pasta dish

I'm one of the many individuals out there who LOVE pasta! Unfortunately, it seems like every time I have pasta, I finish my plate and then feel that dreaded heavy feeling in my stomach. I can plow through a plate of spaghetti in no time, but I never feel that great afterward. It seems like in order to achieve rich flavor, you have to drown your pasta in a sauce that leaves you feeling stuffed and about five pounds heavier. However, there is a way to enjoy great tasting, waist saving pasta without sacrificing flavor.

My husband and I actually stumbled across this recipe when we were trying to figure out what to make for dinner one night. That's usually the way the best recipes are discovered. When you're digging through the fridge, and scraping together a few random ingredients, a flavorful, light, and surprisingly easy dish can be made. In addition to being incredibly easy to make, this dish is versatile and can be served hot or cold, as a main dish with chicken, or as a side.

If you have extra time, try making your own pesto. I personally like the convenience of pre-made pesto to make a quick weeknight meal.

Bow Tie Pasta with Tomato Pesto

Tomato Pesto:

1/3 c store bought pesto

3 Roma tomatoes

1/2 c. parmesan cheese

4 c. bow-tie pasta

1 can artichoke hearts

* In a food processor, blend pesto and tomatoes until smooth and set aside.

* Boil 8 c. water for the pasta.

* Add 4 cups of pasta and boil for 10 minutes or until the pasta is al dente.

* Strain and toss with pesto, and artichoke hearts

* Top with parmesan cheese and serve.

Helpful Hints:

* This pasta is great served hot or cold.

* Add chicken to make this a main course!

Relax with an easy breakfast

This weekend was a great time to get together with friends and family and enjoy the wonderful weather Idaho has to offer. The hum of lawnmowers and weed eaters echoed throughout the entire neighborhood. When it's this nice outside, one of my favorite things to do is get up early, grab a hot cup of coffee and sit outside reading the newspaper, and listening as the rest of the town awakens and prepares for the day.
