Chomp down on these chicken parmesan burgers

Chicken Parmesan was the very first meal I ever made for my husband. He absolutely loved it and said he walked away that night thinking he was dating a great cook. Little did he know that at the time, that was the only dish I knew how to make!

Since then, I've acquired a few more recipes and look back at that night as my first success as a cook.

Most of us don't have time to buy a bunch of random ingredients for new recipes, especially during the week. I'm constantly looking for ways to utilize traditional ingredients and make them into new, fresh dishes.

This recipe is great because it uses the same ingredients as in a traditional chicken parmesan but serves it on a ciabatta roll. Paired with a salad, this meal is a great alternative to the pasta laden chicken parmesan we all love.

Chicken Parmesan Burgers

Ingredients:

1 lb. boneless skinless chicken breast

1 can marinara sauce

1 bunch fresh basil

4-6 slices fresh mozzarella

1/2 c. parmesan cheese

4 ciabatta rolls

pinch of salt and pepper

• Heat marinara sauce over low heat and keep warm

• Fillet each breast into two cutlets, about 1/2 to 3/4 inch thick

• Cook chicken over medium heat either in a skillet or on the barbecue

• Place ciabatta rolls face up on a baking sheet and toast under broiler for about 3 minutes

• Remove from oven and set aside top half of each ciabatta roll

• Place chicken on bottom bun of ciabatta and top with mozzarella cheese

• Return to toast in oven for another few minutes (watch closely)

• Remove sandwiches from oven, top with marinara sauce, parmesan cheese, basil, and ciabatta top

• Serve immediately and enjoy!

Relax with an easy breakfast

This weekend was a great time to get together with friends and family and enjoy the wonderful weather Idaho has to offer. The hum of lawnmowers and weed eaters echoed throughout the entire neighborhood. When it's this nice outside, one of my favorite things to do is get up early, grab a hot cup of coffee and sit outside reading the newspaper, and listening as the rest of the town awakens and prepares for the day.
