Chief Academy Cafe re-opens with busy first day

MOSES LAKE - The Chief Academy Cafe re-opened its doors Tuesday with a new look and a healthier menu.

"It's really interesting to see the changes," said Cafe Assistant Stephanie Fallon. "We have a lot of regular customers who come in. Some of them really like it, others aren't so sure."

A slow start turned into a busy lunchtime rush for the students working at the cafe.

"It was a fantastic first day," Instructor Vance Frost said.

Students were busy preparing fresh food, part of the new approach to a healthier menu using fresh produce, whole grain pasta and pizza crusts and even baked goods made with whole wheat flour.

"It was really hectic," student Shawn Cadrin said. "There was a lot of confusion. It was fun though."

"It's been crazy but it's bee a good experience. I'm learning a lot of skills," Kaitlin Webb said. Webb also worked at the cafe last semester.

One student, Henry Owenn, will be creating a documentary, following the students' experience as they gain the skills necessary to run a restaurant. Owenn said the cafe has started a YouTube channel and will hopefully begin posting videos sometime next week. Owenn is looking to interview customers as well.

The Chief Academy Cafe is designed to introduce students to real world restaurant application. Frost and Fallon with work with students to develop their skills including teamwork, marketing, planning and creative problem solving.

The cafe closed in December because of a fire. The building was saved, but some repairs were needed.

The cafe is open 9 a.m. to 2:30 p.m. Tuesday through Friday and located at 101 E. Broadway Ave in Moses Lake.
