8 questions on eating healthy

We are at the end of my 8 week and questions series. This week, I have 8 questions "Eating Healthy" for Chef Tim Heinig. Chef Heinig is the Managing Chef at the Beachouse Restaurant located in Coeur d'Alene.

Chef Heinig has been cooking for 31 years. He started at age 13 at Sweets Cafe in Wallace. He spent five years cooking in Belgium and has had a long and successful career with Hagadone Hospitality since 1997.

Q. Tim, why has eating healthy become a passion of yours?

A. Five years ago I was diagnosed with type II diabetes. Everything pointed to the lack of a healthy lifestyle of bad food choices and minimal exercise.

Q. What signature dish best defines your healthy cooking style?

A. I would say its more a region than a dish. The Mediterranean kitchen is amazing.

Q. What is your favorite healthy recipe for this winter season? Can you share it?

A. A salad with feta cheese, kalamata olives, diced tomatoes, onion and cucumber tossed in red wine vinegar and oil with fresh basil then topped with a piece of salmon grilled a bit then finished in the oven with white wine butter and lemon. All organic if you can get it.

Q. What type of challenges do you face when it comes to adding healthy items to your menu?

A. A lot of people aren't out to eat healthy at that moment. Even the healthy people are out on their splurge times. Also some healthier foods were a lot more expensive in the past so you didn't carry as much to keep your menu prices down. That is all changing now.

Q. What is the best thing about creating new healthy food recipes?

A. You get to eat them, then share them.

Q. We all have guilty pleasures in terms of food. What's yours?

A. Pizza, pizza, pizza.

Q. As a Chef what is your definition of healthy eating?

A. YOU ARE WHAT YOU EAT! So if you want your mind and body to be right, just eat right.... Everyone knows when they are eating wrong.

Q. What is the one healthy food that presents the biggest challenge to prepare?

A. It's all pretty simple. There is so much available at this time and affordable. If I had to choose something I would say anything (healthy) Kosher can get challenging.

Do you properly feed your flora?

This week, I want to explore another interesting point around probiotics and fermented or cultured foods. I have become a strong advocate for the consumption of cultured foods such as kefir for their probiotic benefits. I have also been taking probiotics in pill form for a few years now to maintain good gut flora.

Health and fitness technology

Technology is a blessing and a curse — most of you would likely agree with this idea. From a health and fitness perspective, technology can be a blessing giving you tools and motivation to track your progress to a healthier life. Technology can also be a curse, delivering limited accuracy in the metrics it provides, distracting you from quality life moments with loved ones, and it becomes an intrusive crutch distracting you from day-to-day tasks.
