New food at Silver Lake Mall

Three food businesses will occupy the Food Court spaces vacated by Taco Time and Orange Julius in Silver Lake Mall. Philly Express, Aebleskivers and Barbara's Homemade Fudge & Divinity will open toward the end of the month.

Philly Express will offer a variety of cheese-steak sandwiches, hoagies, hamburgers, fries, grilled cheese sandwiches, salads, hot dogs, chili, home-made soups and chili dogs. Philly cheese-steaks were added to the mix at the existing Aebleskivers location in October. And Aebleskivers will move from mid-mall to the Food Court.

A European delight, aebleskivers (Danish for apple slices) are round pancakes with choices of fruit toppings, sausages, havarti cheese, beer-cheese sauce, chocolate and gluten-free. Barbara's Homemade Fudge has been a kiosk in the mall owned by Barbara and Max Weekly. They offer different flavors of fudge and an assortment of fruit smoothies.

Hours will be 10 a.m. to 8 p.m. Monday through Saturday and 11 a.m. to 6 p.m. Sundays.

Panhandle Carports opens

Engineered wooden carports are the specialty of Panhandle Carports, a new business in Suite 15H of Sunset Village Suites at 296 Sunset Ave. (across Highway 95 from Fred Meyer).

The carport kits are pre-cut and ready to be installed by contractors on prepped sites. The company also offers structures for RV storage, boat covers, livestock shelters and hay storage. It is a dealer for 30-year-old Dandi Buildings of Whitefish, Mont.

Optimal Chiropractic in Post Falls

Optimal Chiropractic will open Monday in Suite 1 at 609 N. Calgary Ct. in Post Falls.

With hands-on care for all ages, owners and chiropractors Chris Nelson and Emily Wentworth graduated from Palmer College of Chiropractic in Davenport, Iowa.

Originally from Ephrata, Wash., she attended Central Washington University and was an intern in the Palmer College sports injury and rehabilitation department. Originally from Knoxville, Iowa, Nelson graduated from William Penn University. Their services include light-force techniques, myofascial release and instrument-assisted soft tissue mobilization.

Changes with Wiggett's Antiques

Major dealer-vendor changes are occurring with Wiggett's Antique Marketplace at 115 S. Fourth St.

Two new dealers have come into the main floor, a third is moving from downstairs to the main floor, and a fourth is expanding into that space downstairs where two others have swapped spots. Upstairs a couple whose parents previously had an antique store on Sherman Avenue have moved into a side area.

ArtCoLab is expanding on the Front Street side of the building and has been contracted to add a huge North Idaho-themed mural to the alley side of the building.

The seats were down front in the "coach's block" with the EWU coach's wife Robyn Hayford and her friends. We took off our "Montana" garb and were polite when the Griz won 77-76. Heh, heh.
