Try this easy and tasty recipe for applesauce-oat bran muffins

These are very tasty muffins to use the applesauce you made from last year’s apples. I also added 2 T of hemp seed to the recipe.

Applesauce-Oat Bran Muffins

1 cup oat-bran cereal 2 eggs

1 cup flour 1 cup apple-

1 tsp. baking powder sauce*

½ tsp salt 3 T milk

¼ cup raisins 3 T oil

Topping: 1 tablespoon sugar mixed with ½ teaspoon ground cinnamon and ¼ cup chopped walnuts.

Heat oven to 425°. Grease twelve 2 ½ -inch muffin cups. In a large bowl mix bran, flour, sugar, baking powder, salt and raisins. Slightly beat eggs in a small bowl.

Stir in applesauce, milk and oil. Pour egg mixture over flour mixture; stir just until dry ingredients are moistened. Scoop or spoon over batter into muffin cups, filling ¾ full. Sprinkle with topping. Bake 20 minutes or until a toothpick inserted in center of a muffin comes out clean. Place pan on wire rack to cool 5 minutes before turning muffins out. Serve warm. Makes 12

* no Applesauce use 1 1/2 cups grated apples.
