This is an easy one and one I just tried after seeing it on TV. .

This easy and delicious, nutritious morning start is called Avocado Egg Bake

Avocado Egg Bake

1 avocado

2 eggs

Slice the Avocado in half, remove the seed. Cut a small slice off the bottom so the avocado will stand without turning.

Take a little of the avocado out from the middle to form a well big enough to hold the egg. Put the 2 pieces on a slightly greased baking pan.

Break an egg into the well.

Sprinkle with salt & pepper.

Bake in the oven at 425º for about 20 minutes or until the egg is set. Enjoy.
