Cosmic Cowboy Grill slated for April opening

Emphasizing gourmet healthy eating, Cosmic Cowboy Grill will open in late April in the large pad building of Appleway Square at 412 W. Haycraft (west side of Highway 95).

The concept will serve locally-sourced, grilled-to-order meats, farm-fresh vegetables, creative salads, sandwiches, wraps and desserts. Beverages will include house-made ice teas and lemonades, artisan soft drinks, microbrew beers and regional wines.

“With a large fitness community and new people moving to the area, there seems to be a large pent-up demand for this type of food,” said owner Steve Eller. “We are planning for special menus to support athletes prior to big events in the area.” Chris White is general manager.

Options will include online ordering, food-to-go and catering. With a decor of “Jackson Hole shabby,” the place will seat 74 inside and 26 on the patio. Hours will be 11 a.m. until 9 p.m. Sunday through Thursday and until 10 p.m. Fridays and Saturdays. Check www.cosmiccowboygrill.ciom.

EyeGuys, Little Caesars

in Cornerstone plan

A 4,500-square-foot building under construction at 8220 N. Cornerstone Drive (between Jimmy John’s and BioLife west of Highway 95) will contain EyeGuys Optical and Little Caesars. It should be complete in May.

EyeGuys will move from a neighboring building at 8160 N. Cornerstone, and 1,200 to 1,700 square feet there may be available to lease. Contact GVD Commercial Properties at 509-534-5805.

The Little Caesars Pizza will have a drive-through, delivery and hot-and-ready take-out. It will offer regular round-crust and deep-dish pizza, crazy bread, cheese breads, chicken wings in various flavors, salads and Pepsi products.

Owners Mike and Noelle Ethington will have special dough-making equipment for the crust to be light and airy. They anticipate about 30 employees. Little Caesars is the largest carryout pizza chain.

Dingle businesses

have closing sales

Closing their businesses because the historic Dingle building at Fourth and Sherman will be changing into a hotel, Johannes Jewelry and the Sports Cellar are having big sales.

With designer jewelry and custom pieces, Johannes is open 10 a.m. to 5 p.m. Monday through Saturday. Owner (and former mayor) Sandi Bloem had the business for 30 years and is semi-retiring. Phone 664-3874.

Little Mo’s has

closing sale also

Closing with retirements after 50 years, Little Mo’s Optical at 1720 Lincoln Way is having a closing sale until the end of March. This includes eyewear, lens packages, frames and sun glasses.

Subway is world’s

biggest food chain

The item above about the new Little Caesers Pizza store got me checking on the biggest food chains.

The pizza chains were listed on one scale of eat-in and carry-out-delivery. The biggest is Pizza Hut at 15,605 stores followed by Domino’s at 11,629, Papa John’s 4,708, Little Caesers 4,059 and Papa Murphy’s 1,425 (and headquartered in Vancouver, Wash).

The biggest of all food chains in Subway with 42,174 places in 107 countries followed by (2) McDonald’s 35,000 in 119 countries, (3) Starbucks 23,187 in 64 (and headquartered in Seattle), (4) Kentucky Fried Chicken 18,875 in 118 and (5) Burger King 13,000 in 79. This Google list had Pizza Hunt No. 6 at 11,139 in 93 countries.

Now for the Tidbits

• The Emerald Cleaners building at Fourth and Montana Avenue will be a new Midtown pub. And a real estate business will be in the southern portion near the Bluebird restaurant.

• The Ugly Fish restaurant in Riverstone will be replaced with another Asian eatery called Umami Ramen. Watch for Kitchen CDA in the Silver Lake Mall food court. Spies say other stores are coming into the mall also. Taco Loco will be where Valentino’s Pizza was off Canfield Avenue. A Cash & Carry store will be behind Wendy’s off Appleway.

• In Hayden, an Asian eatery will be where Kynrede Cafe was on Government Way. A major development called The Crossroads is proposed for Athol. Watch for details. We anticipate a Super 1, a bank, coffee shop, a motel, a gas station-convenience store, a restaurant and others.

• Downtown — Watch for Rustic Restaurant at 309 Sherman (next to Clark’s Jewelry).

• Domino’s Pizza is moving to a new place in Post Falls. Anyone have any news on Popeye’s Louisiana Kitchen coming to Post Falls? New places coming to Tedder Business Center (formerly the Post Falls Outlet Mall) north building will include Black-Ops Self Defense, Knowhere Comics, Coffee & Games, SNR Costume Rental, The Coffee House and My Big Fat Greek Deli.

• Give me ambiguity or give me something else.

• A real headline: “Kids make nutritious snacks.”

• ”Lay: requires a direct object as in “I will lay the book down.” “Lie” doesn’t take a direct object as in “I will lie down.”
