After business woman Candy Clark placed a bid with the county to cater to the crowds who visit Kootenai Falls every summer, she was a little surprised to win it.

The popularity of the tourist attraction, combined with scenes from the 2015 Oscar-winning movie “The Revenant” having been filmed at the falls, meant that there was competition for the spot. The large parking lot alongside Highway 2 is consistently packed during the summer months.

Clark, who owns Uptown Video in Troy and runs a food truck and catering business out of the video store’s parking lot, opens at the Kootenai Falls location Friday, May 26.

The truck in Troy will remain open, and Clark plans to expand to four employees to staff both locations as once.

Troy High School student Lexi McCann, whom Clark hired for the summer of 2016, is now trained to run every aspect of the stand and will be a big help this year in both locations, Clark said.

The stand at Kootenai Falls will offer hot dogs, sandwiches and refreshing huckleberry treats for tourists and locals alike at the trailhead entrance.

“We’ll keep the falls menu simpler than the Troy menu,” Clark said. “We won’t have the deep fryer out there, so it’ll be hot dogs, and we’ll do a barbecue pork sandwich and lots of ice cream and cold drinks.”

Some of the meat options offered at Clark’s stands are from local meat processor Woods, based in Sandpoint.

“The meat from Woods is all grass fed and locally raised, so make sure to ask for the Harvest burger or one of our German sausages” Clark said.

Clark got into the catering business by purchasing a hot dog stand from Mike Taylor. The purchase was made “over a few hot dogs, handshakes and hugs,” Clark said.

“But now I’m a licensed caterer, and fully insured so it’s come a long way,” she added.
