New Dodge Peak Lodge owners offer authentic European cuisine

BONNERS FERRY — A professional career chef from Holland, who has cooked for residents of castles, brings his expertise and love of the culinary arts to the community of Bonners Ferry.

The van de Kolk family has decided to make Bonners Ferry home and have begun the process toward purchasing the Dodge Peak Lodge with a passion to bring quality fare to the region and comfortable lodging for those who wish to stay in the accommodations.

Originally from Holland, Dirk van der Kolk brings a wealth of culinary professionalism to his new restaurant endeavor.

“I have been a chef for 42 years and earned a culinary degree in Switzerland,” said van der Kolk. “I had the privilege of cooking and traveling much of Europe.”

van der Kolk has owned and operated two previous restaurants; The Wooden Shoe in Post Falls and The Wine Grotto in Hayden. Most recently, prior to moving to the Bonners Ferry area, the van der Kolk family resided in Florida.

“We are happy to be in Bonners Ferry,” said Dirk van der Kolk, who did not enjoy the humidity of Florida.

The newly renovated and decorated restaurant within the hotel is named, Tavern at the Lodge, and offers fine European cuisine within the elegant space that is the dining room.

The van der Kolks have big plans for a delicious menu.

“The restaurant will offer some Italian, some German, and some Dutch,” said Kim van der Kolk, who is Italian by heritage.

Menu items will include European favorites, most for less than $20, such as Wiener Schnitzel, Hungarian Goulash, Jaeger Schnitzel, Cioppino, Lasagna, and other dishes such as ribeye steak and varied salads.

The establishment has recently received its beer and wine license, and currently offers a selection of red and white varieties of wine at this time.

Opening day was Dec. 19. The Dodge Peak Lodge Restaurant’s winter hours are Thursday through Sunday from 5-9 p.m. They are located at 5952 S. Main St. in Bonners Ferry.
