Eileen was born Feb. 29, 1932, to Awald and Helen (Herzog) Fischbuch in Edmonton, Alberta, Canada.

She is survived by two sons, Robert (Whitey) and wife Sandy (Cipollini) Henschel of Lexington, Tenn., and Terry and wife Cheri (Van Dorn) Henschel of Capistrano, Calif. She was blessed with four grandchildren, Sean David and wife Kelli, Matthew Ray and wife Lindsay, Renee and husband Grant Gold, and Danielle Henschel. The joy of everyone’s eyes were four great-grandchildren, Tessa (10), Hudson (7), Kaden (9) and Kaia (7).

Eileen’s heart never left Canada and the farm. Health issues by her husband, Clarence, brought them to the U.S. in 1959. Eileen was well liked in Food Services at Cal Lutheran College for nearly two decades. Her love for the Lord was shown in her faithful attendance of each Lutheran Church in the multiple cities in which they lived. Even in her battling health issues for years, she had communion and visits with her pastor, Larry Comer.

Eileen’s green thumb produced beautiful indoor plants and amazing outdoor gardens. Between her gardening, canning, crocheting and playing cards with family and friends, her life was full! One of our fondest memories was sharing warm slices of “Kuchen Bread” and her Cabbage Rolls! She will be missed immensely for her food and laughter.

There will be two services to celebrate Eileen’s life. The first will be held at 1 p.m., Saturday, March 18, 2023, at Christ the King Lutheran Church (1700 E. Pennsylvania Ave. Coeur d’Alene, ID 83814). The other will be held at 1:30 p.m., Thursday, April 20, 2023, at St. Paul’s Lutheran Church (5104 Ellerslie Road S.W. Edmonton, Alberta, Canada). Eileen’s ashes will be joining her husband at the columbarium in Edmonton after the service and reception.
