Veterans of another Polson Mexican restaurant will open one of their own early next year.
The Guerrero family bought the old 4B’s location on Hwy. 35 in July and plans to open an authentic Mexican restaurant there in the first week of January.
Everardo Guerrero, a part-owner with his parents and brother Alexis, explained that they’ve done a lot of work to get this location ready. Last weekend, they added the flooring and tables.
The restaurant will serve multiple shrimp, chicken and beef dishes, along with quesadillas, tacos, and Mexican pizza. Everardo said they plan to add more to their menu every month. The restaurant will be full-service, with beer, wine, takeout and DoorDash available.
Everardo said he is excited to serve Mexican meatballs, which are a less traditional menu item.
Everardo and Alexis will manage the restaurant and will work alongside their parents, Lalo and Adriana. Another part-owner, Encizo Eder, will be running the kitchen. Everardo said they have all their kitchen and waitstaff, but will need to hire some bussers.
Everardo said they were associated with Fiesta En Jalisco for 23 years, and were there until this November. His father, Lalo, ran a restaurant before they moved to Polson in 2002.
Guerrero’s will be the family’s first fully owned and operated restaurant, not a franchise.
