ENZO opens event room, expands kitchen

MOSES LAKE — ENZO owners and staff cut the ribbon on the restaurant’s newest facility, called the Riviera Room, on Wednesday.
ENZO already had a smaller banquet facility, called the Amalfi Room, owner Rhonda Cacchiotti explained, but it’s also used for everyday dining and even when it’s booked for private functions it can only accommodate 25-30 people.
“This (Riviera) room has capacity for 60-80 people.” Cacchiotti said. “It has a private entrance. It has AV equipment (with) a drop-down screen. We have speakers, we have microphones. We have a podium that can be used. We have room to push tables into different configurations, where we can have a small dance floor. We have a full banquet buffet menu that we can also customize.”
Along with adding the Riviera Room, ENZO also expanded its kitchen, giving Executive Chef Dez Campos a little working space.
“Really this is just a playground for me where I can have fun and invent new things in a big prep room,” Campos said. “Because when we had catering, we were getting overfilled in the main kitchen, and people were bumping elbows.”
The extended kitchen has a three-in-one oven that can cook different things at different temperatures simultaneously, Campos said, and a huge mixer dedicated to focaccia bread.
“I mean, you’re talking 100 pounds of focaccia bread a week, just regular service, besides catering,” Campos said.
Besides the workspace, Campos uses the extra room for training his staff and is looking at offering pasta cooking classes down the road, he said.
ENZO opened in August 2022, Cacchiotti said, and specializes in fine Italian cuisine. Cacchiotti and her husband, orthodontist Dino Cacchiotti, have lived in Moses Lake for more than 30 years.
Getting Campos to run the kitchen was a real coup, Rhonda Cacchiotti said.
“He is the best,” she said. “He’s a chef that could be anywhere in the world at one of those high-end Michelin restaurants, but we are fortunate that he loves Moses Lake. He’s from Moses Lake and he wants to be in Moses Lake.”

Space Burger booth open March 13-15
MOSES LAKE — Those who can’t wait for the Grant County Fair can get their Space Burger fix next weekend, according to an announcement from the Lioness Club of Moses Lake. The iconic Grant County sandwiches will be available at the Grant County Fairgrounds March 13-15, according to the announcement. There is no admission fee to get into the fairgrounds that weekend.

Valentine’s Day cards flood Brookdale Hearthstone with love
MOSES LAKE — Residents at Brookdale Hearthstone Assisted Living in Moses Lake got Valentine’s Day greetings from across the country last month. “I believe that the only states we have not received (cards from) yet are Vermont and Maine,” Lifestyle Director Imelda Broyles said Feb. 24. “We keep receiving new cards every single day. They have not stopped. My residents are in awe with every single one of the cards that we’ve been receiving.” The Hearts Across America project started as a way for children in school classrooms to exchange Valentine’s Day cards with classes in other states or even countries, but the idea has expanded to senior living facilities, according to the project’s social media.
