Twigs Bistro to join downtown Coeur d'Alene dining scene
HAILEY HILL | Hagadone News Network | UPDATED 1 month, 2 weeks AGO
COEUR d’ALENE — Twigs Bistro owner Trevor Blackwell has a vision for the regional chain’s newest location in the new Thomas George building at the corner of Third Street and East Front Avenue.
“We want to be more than just your ‘special destination’ restaurant,” Blackwell said. “We want to be the place you go once a week to grab an appetizer or cocktails with friends.”
The restaurant, which could open as early as December, is a first for North Idaho. Twigs got its start in 2001 in Spokane and will now have eight restaurant locations in its portfolio.
Over two decades and with every franchise expansion, Twigs has stayed family-owned and operated, with Blackwell, his wife, Jayne, and his dad at the helm.
“To make it 24 years now and still be working and thriving is really great,” Blackwell said.
The new restaurant will offer Twigs’ “core” menu that includes a wide variety of entrees, handhelds, pizzas and popular sharable dishes like “Twigs Fries,” Moroccan beef and calamari.
New menus are introduced a few times each year and are collaborative efforts by the teams of chefs at each restaurant, Blackwell said. Their craft cocktail and drink menu also rotates seasonally.
“(Twigs) is really a big family for us,” he added. “That’s how we run the business — everyone puts in the work to make things the best that they can be.”
Though smaller than other Twigs locations, the downtown Coeur d’Alene spot offers views of Lake Coeur d’Alene, McEuen Park and indoor and outdoor dining options.
Blackwell said guests will be able to expect good value and a “lively, energetic vibe” when dining at Twigs.
“You should walk away feeling like you had a great meal and memorable service,” he said.
