40 UNDER 40: Anthony Minutoli

As the Beverage Manager for Lake Coeur d’Alene Cruises and The Marina Cantina, Anthony Minutoli brings with him more than 20 years of experience in corporate restaurant management.

Though he didn’t pursue a traditional four-year degree, Minutoli received an education through practical experience, mentorship and continuous learning in the field.

“I have had the opportunity to observe and learn from strong leaders and managers in higher level roles, studying, both their successes and their mistakes,” he said. “Through hands on experience, I have also learned from my own challenges, which has strengthened my decision making, adaptability and leadership ability.”

Minutoli said his real-world education has allowed him to clear identify strengths and strategically apply them to create value in the work he does today.

“I view my education as on ongoing process, as I remain committed to growth, self improvement and learning in ways that directly enhance my performance and results,” he said.

Minutoli said his 22 years in corporate restaurant management has helped shape the person he is today.

Opening new locations and launching emerging brands taught him how to balance vision with execution. Developing menus, consulting on new ventures and contributing to property and kitchen design strengthened his strategic thinking and operational foresight.

Working across craft kitchens, fine dining and quick service environments gave him a comprehensive understanding of both hospitality and scalability. Managing multiple multi-unit locations sharpened his leadership discipline and ability to build strong, accountable teams. Observing high level decision making, culture development and brand stewardship shaped his own leadership philosophies.

What does the future hold? Minutoli said the answer is simple.

“Always grounded in accountability, adaptability, and continuous improvement, I have somehow always found opportunities to take things to the next level, surrounded by a team of like-minded individuals with traits, resources and abilities far greater than mine,” Minutoli said.
