Root vegetables are a good source of complex carbohydrates and dietary fiber; they also stabilize blood sugar and provide long-lasting energy. They are also packed with vitamins and minerals, protect cells from damage and lower chronic disease risk.

One of the most common root vegetables is the sweet potato. A healthy and low-calorie way to enjoy it is to peel it, cube it, spread it on a baking sheet and drizzle with olive oil.

With clean hands, toss the cubes so they are evenly coated with the oil, and spread evenly on the baking sheet. Roast at 425 for about 25-30 minutes or until the cubes are fork-tender.

Flip and stir with a spatula about every 7-10 minutes for even browning and crispy, caramelized edges. No need for brown sugar, butter and marshmallows in this recipe. Enjoy! (Nutrition facts from CSKT Public Health Department and NIH)
